Cornice is one of the few details in a house visible from every angle and almost never hidden by furniture. You notice a bad one straight away, usually as a wavy line or a shadow that thickens towards one end of the room.
Done properly it softens the junction between wall and ceiling, tells you roughly when the house was built, and hides the small imperfections that exist in every ceiling, especially in old homes where nothing is square.

One warning on open-plan renovations. If the room has a bulkhead over the kitchen or a dropped section for ducting, the cornice has to work on both levels, and that is a setout decision worth making before anything is fixed.
